Carole Ann Goins Coons, 84, died November 1, 2023, surrounded by the love of her family and guided by peace from the Holy Spirit. Carole’s life ended the way she lived it, with courage, tenacity, and faith, and she is deeply missed by her family, community, and friends. Those who knew Carole even briefly knew she was an extraordinary woman for whom we can never find words to truly describe.

Carole was born July 21, 1939, in Miami, the oldest child of Pauline Murphy Billington and Charles Goins. She grew up in Hialeah in the company of her beloved grandmother, Ora “Big Mama” Murphy, her younger sister Barabra Jean Goins Williams, and 50 first cousins. She got her start in the restaurant industry working at the first Burger King location, where she met Thomas “Denny” Coons and had four children. Carole was one of the most energetic and hardworking people anyone knew, working as a waitress at the Met Drugs diner and then Cozy Kitchen in Hialeah. She purchased Cozy Kitchen in 1992 and the business relocated to Miami Springs as Cozy Corner in 1995. Carole found great joy in serving customers and friends at Cozy, and she became a pillar in the Miami Springs community. She was known for her generosity and was as quick to offer her opinion on local events as she was to personally deliver hot meals to customers who had fallen ill. Her restaurant epitomized the term family business as her son, daughters, and grandchildren clocked in to work and staff members regularly attended Thanksgiving and birthday parties.

Carole loved getting a good deal at Macy’s, caring for her plants and her beloved animals, watching Dateline or Law & Order in her rocking chair, and drinking a strong cup of hot tea. She was known for her colorful and stylish blouses, which always matched her earrings, her festive holiday décor, and her love for her country. However, her greatest love and pride was her family. She loved hosting large family gatherings and bragging about the accomplishments of her children and her 12 grandchildren. Her seven great-grandchildren delighted in visiting Gigi’s house, where they were properly spoiled. She maintained close relationships with her cousins throughout their lives and was well-loved by her nieces and nephews.

Carole is preceded in death by her parents, grandmother, and sister. She is survived by her children Denise Delvalle (Jacob), Karen Bush (Jim), Robert Coons, and JoElaine Mitnick (Jeff); her grandchildren Shannon Romagnolo, Danielle Romagnolo, Amanda Romagnolo (Woodie), Adam Romagnolo, Joshua Romagnolo, Megan Mitnick, Hannah Mitnick, Stephanie DelValle, Mallory Mitnick, Jacob DelValle, Christopher Coons, and Colin Coons; great-grandchildren Jordan, Riley, Matthew, Aaliyah, Owen, Juliet, and Samuel; and many cousins, nieces, nephews, and friends. The family extends their heartfelt thanks to the Cozy Corner staff and customers and to the Miami Springs community for their love and support during this difficult time.

A visitation for Carole will be held Monday, November 6, 2023 from 6:00 PM to 10:00 PM at Caballero Rivero Hialeah, 373 W 9 Street, Hialeah, FL 33010. A funeral service will occur Tuesday, November 7, 2023 from 10:00 AM to 11:00 AM at Blessed Trinity Catholic Church, 4020 Curtiss Parkway, Miami Springs, FL 33166. A committal service will occur Tuesday, November 7, 2023 from 11:30 AM to 12:00 PM at Our Lady Of Mercy Catholic Cemetery, 11411 NW 25th Street, Doral, FL 33172.
